Our Monsooned Malabar AA coffee is one of our most unique types. In the old days a load of coffee from India that was bound to Europe would take months by sea. During this time, the beans were stored in open air silos, and were exposed to moist sea air. The coffee would swell up, and turn to a pale golden color. With the advent of modern transportation, the coffee lost it's unique taste, so the farmers started to use the moist monsoon winds of their region to acquire the same effect. The coffee is now picked when it is ripe, and stored until the monsoon season. It is then left in special warehouses with sides that open to allow the winds to circulate around the beans. This is a process that takes great care, as the beans must be constantly raked to prevent mold.
The moist monsoon air causes the beans to almost double in size, as they are exposed for 12 to 16 weeks. The beans also loose most of their acidity, and gain a heavy body.
This coffee is not for those who want a clean cup. Many people describe the taste as “funky”. It has a very heavy body, lots of earthiness, with a musty aroma. This is for coffee lovers who want to try something new, something different. There are not many people in the middle on this one, most either love it or hate it.
